So, being the laaaazy gardener than I am, my lovely little container of mint and basil is still sitting on the deck.
Covered in snow and just looking oh so sad.
So this recipe will be perfect for summertime when it comes back again (I hope!)
Until then, mint is pretty easy to find in the grocery store thankfully.
This Purple Cabbage, Grapefruit and Mint Salad is a take on a old Real Simple book I own called Celebrations.
It basically has fun and simple (shock) themes for various parties – think adorable backyard BBQ in the summer and fun cheese and wine parties, complete with name tags on the different fromages 🙂

I love this recipe particularly because it uses something I’ve been really into lately: purple cabbage.
This stuff is bursting with nutrition – fibre, vitamins, minerals and antioxidants.
Not to mention the bioactive compounds we can’t even name yet!
Bottom line: a nutritional superstar 🙂
