- shallots – celery – 1 pkg ground turkey – Italian canned tomatoes - tomato paste - corn (frozen or canned) – dried oregano and basil – low sodium chicken broth – Kosher salt

Heat 1 tablespoon of oil in a large pot over medium heat. Saute onion, stirring frequently until soft about 1 min.

Add ground turkey and cook until no pink remains. Then add celery and cook for 2 minutes, stirring frequently.

Then add the diced tomatoes, tomato paste, frozen corn, oregano, basil and a pinch of salt and some pepper. Stir to combine.

Then add the chicken stalk. Bring to a simmer on medium heat for about 10-15 minutes. Taste and add salt and pepper if needed.
