Heat olive oil in a saucepan and add the chopped onion, cook for about 30 seconds. Add garlic and stir and then add all other spices

Add the chickpeas, lentils, diced tomatoes and coconut milk. Stir and bring the curry to a slow boil (or can make in slow cooker too! Just set to low.)

Reduce the heat to low and simmer for about 12-15 minutes or until lentils are soft. Add spinach. Serve hot.

For slow cooker, cook on low for up to 8 hours, adding spinach 1 hour before eating.
