5 large carrots Olive oil Dried oregano, basil and parsley Fresh garlic Parmesan cheese Salt and pepper

First, wash and cut the carrots about ⅛ th of an inch.  The thinner you slice them, the faster they'll roast!

Spread  carrots out on a large baking sheet, covered in parchment paper. Sprinkle with Kosher salt and drizzle with olive oil.

Roast carrots for about 25 minutes. Then toss them in the oregano, basil, parsley, garlic and parmesan cheese.
