This Easy Watermelon Soup just bursts with freshness! It's a summery take on the traditional cold soup: gazpacho.

You'll love this cold watermelon soup because it's packed with hydrating cucumber, sweet watermelon, refreshing mint - and no tomatoes!

MAIN INGREDIENTS

Watermelon

Cucumber

Red onion

Garlic

White wine vinegar

Lemon & Olive oil

Mint for garnish

Cut the watermelon, red onion and cucumber into chunks.

STEP 1

Blend the vegetables and watermelon with the garlic, lemon, vinegar, olive oil and salt.

STEP 2

You can use a hand blender and do it all in a large pot or you can use a blender like a Ninja or a Vitamix.

STEP 3

Chill the blended soup in the fridge for a couple hours.

STEP 4

When you're ready to serve, divide the soup into small bowls. Add the mint on top and enjoy!
