This Slow Cooker Chicken and Potatoes recipe is super easy to make with wholesome ingredients like chicken breasts, mini potatoes and green beans slow cooked in a delicious and herb-forward sauce.
1 ½lbshalved baby potatoesred or gold, about 4 cups
⅓cuplemon juice, fresh
¼cupolive oil
1teaspoonItalian seasoning
1teaspoonsalt
¼teaspoonpepper
¼teaspoononion powder
2clovesminced garlic
Instructions
Sear chicken breasts in a non-stick pan with a little olive oil on the stove for just 2 minutes per side.
Place seared chicken breast in the bottom of the slow cooker.
Add potatoes on top.
In a small bowl, whisk the lemon juice, olive oil, Italian seasoning, salt, pepper, onion powder, and garlic together.
Pour mixture over the chicken and potatoes.
Cover with lid and cook on high for 1 ½ hours. Add the green beans.
Cook for another 30 minutes.
Remove the lid and serve.
Notes
Searing the chicken breasts first help to develop flavour and give a nice colour to the chicken BUT if you don't have time, you can skip this step.Leftovers good for up to 3 days in the fridge and are delicious heated up.Note on cooking time: after 1.5 hours on high, the chicken breasts will be cooked through. Check with an instant read meat thermometer that they are at least 165 degrees F.
