Lemon Chicken Marinade

Ingredients

  • ¼ cup olive oil
  • ½ teaspoon Kosher salt
  • 1 tablespoon Dijon mustard
  • Juice of 3 lemons
  • Zest of 1 lemon
  • 1 kg boneless, skinless chicken thighs about 6-8 thighs

Instructions

  • Whisk all marinade ingredients together in a medium bowl.
  • Add chicken. Turn to coat all sides of the chicken.
  • Cover bowl and place in fridge. Marinade for 1 hour.
  • Remove from fridge and cook chicken on grill or BBQ for about 6 minutes each side or until chicken comes to 165F degrees on an instant read thermometer. Serve with rice and veggies for a complete meal.

Notes

Yield: Makes about ¾ cup of marinade.
Leftover cooked and marinated chicken is good for up to 3 days in the fridge.
Discard any unused marinade.
