Simple Arugula and Bocconcini Salad with Creamy Dressing

Ingredients

container Arugula salad greens
1
cup
mini-mini bocconcini cheese
or 1 whole container
1
cup
blueberries
8
"on the vine" or other fresh tomatoes you prefer
Dressing
½
cup
2% Greek yogurt
1
clove
garlic
Fresh lemon juice
Salt and pepper
Instructions
Whisk together the greek yogurt, garlic, lemon juice and salt and pepper.
Arrange arugula on 4 plates
Top with sliced tomatoes, cheese and blueberries, dividing up equally between the plates.
Drizzle the dressing over top.
Serve immediately.
Notes
For a quick and full meal, add hummus and pita on the side or brown rice and shrimp skewers or grilled chicken.
