Canned coconut milk

Basmati rice

Limes

Kosher salt

Cilantro

Rinse the rice with a fine mesh strainer.

STEP 1

Let soak for a couple minutes and remove.

STEP 2

Add rinsed rice, coconut milk and water to the Instant Pot. Stir and add Kosher salt.

STEP 3

Secure Instant Pot lid and set to "Rice". Do an NPR for 15 mins.

STEP 4

Remove lid. Stir in lime juice and lime zest. Fluff it up, top with cilantro and enjoy!
