Easy Weeknight Ground Turkey Soup
This Ground Turkey Soup is perfect for weeknights when you don't feel like you cooking dinner but you know you gotta. This is a healthy, filling soup your fam will love!
- 1 shallot or small sweet onion, diced
- 3 stalks celery, diced
- 1 pkg ground turkey meat about 0.5kg
- 3.5 cups seasoned, stewed tomatoes, large pieces 1 large can, 28 oz
- 1/2 cup tomato paste 1 small can, 5.5 oz
- 1 cup frozen corn
- 2-3 tsp dried oregano
- 2-3 tsp dried basil
- 4 cups low salt chicken broth
- Salt and pepper to taste
Heat 1 Tbsp of oil in a large pot over medium heat. Saute onion, stirring frequently until soft about 1 min.
Add ground turkey and cook until no pink remains, breaking up as you go, with a wooden spoon.
Add celery and cook for 2 minutes, stirring frequently.
Then add the diced tomatoes, tomato paste, frozen corn, oregano, basil and a pinch of salt and some pepper. Stir to combine.
Then add the chicken stalk and put the lid on the pot. Bring to a simmer on medium heat for about 10-15 minutes. Taste halfway through and add salt and pepper to taste if needed.
Makes 12 cups.
