Broccoli Rice Salad with Feta

Dressing: Olive oil, lemon, white wine vinegar, s&p

Add rice, broccoli florets, chickpeas, feta and red onion to a large bowl.

STEP 1

Whisk together the dressing ingredients of olive oil, fresh lemon juice, white wine vinegar and salt and pepper.

STEP 2

Pour dressing over salad and stir to combine. Enjoy right away or store in fridge if serving later.
