Summer Quinoa salad

This Summer Quinoa Salad with Mango is packed tons of fresh fruit, creamy avocado, and bright lime juice!

It's a healthy summer salad high in protein, healthy carbs, and antioxidants. A delicious, easy to make and naturally gluten-free quinoa salad for summer!

Cooked quinoa

Mango

Blueberries

Cherry tomatoes

Avocado

Dressing: limes & cilantro

Cook the quinoa in water  according to package directions. Fluff with a fork when done.

STEP 1

While quinoa cools, in a large bowl combine mango chunks, blueberries, cherry tomatoes, diced avocados and cilantro. Add quinoa.

STEP 2

Squeeze the juice of 2 limes over top and toss to combine.
