SWEET CORN & CHICKEN SOUP

 Brimming with delicious corn, protein-packed chicken breasts and bright green kale, this healthy corn and chicken soup recipe is a perfect all-in-one pot meal!.

Shallots

Baby potatoes

Gluten-free chicken broth

Cook some of the corn kernels on a cast iron pan to bring out sweetness.

STEP 1

Meanwhile, sear chicken breasts in Instant Pot on both sides. Remove.

STEP 2

Saute the onion and celery in the pot for 2 minutes.

STEP 3

Add the potatoes, cooked corn, and frozen corn to Instant Pot.

STEP 4

Top with chicken breasts.

STEP 5

Add gluten-free chicken broth.

STEP 6

Set Instant Pot for 8 minutes on High pressure.

STEP 7

When the time is up, blend with hand blender and then add kale and cream. Serve hot.
