Easy Peanut Sauce with Lime

This Easy Peanut Sauce with Lime (gluten-free) is packed with fresh ingredients and comes together so easily! Think fresh ginger, sesame oil, honey and lime work together to make a delicious, simple and gluten-free peanut sauce. Perfect almost anywhere - try it on hearty salad bowls, smeared on top of BBQ'd chicken or dip grilled tofu in it.

Ingredients

  • ½ cup natural peanut butter
  • 1 tablespoon gluten-free soy sauce
  • 2 teaspoon rice wine vinegar
  • 2 teaspoon sesame seed oil
  • 2 teaspoon fresh ginger
  • 1 teaspoon honey
  • 1 lime (for the juice)
  • 2 pinches of salt
  • ⅓ - ½ cup cup warm water

Instructions

  • Put all the ingredients (except the water) into a high speed blender or a small food processor. Pulse the blender for about 20 seconds or so and check out the consistency of the peanut sauce.
  • Add some warm water, 2 tablespoon at a time and blending each time until it gets to the consistency you want. More water=thinner peanut sauce. 
  • Serve or keep in fridge for up to 3 days.

Notes

Make ¾ cup of peanut sauce.
If you make this ahead of time and keep it in the fridge, bring it out to room temperature before you want to use it and whisk it a few times. If you need to speed up the process, you can very gently warm it in the microwave (don't cook it!) and/or whisk a tablespoon of water into it to bring it back to life????
