Best Cast Iron Pork Tenderloin Recipe

This recipe for Cast Iron Pork Tenderloin is so delicious and easy to make! With a 5 ingredient sweet and tangy marinade, this pork tenderloin gets a sear in the cast iron pan and then finished in the oven.

Ingredients

  • 0.5 - 1 kg Pork tenderloin

Marinade ingredients

  • cup brown sugar
  • ¼ cup gluten-free soy sauce
  • ¼ cup white wine vinegar or apple cider vinegar
  • 1 tablespoon fresh ginger, minced
  • 4 cloves garlic minced

Instructions

  • Add marinade ingredients in a small sauce pan. Whisk to combine and bring to a simmer. Cook this down till thicker and a bit sticky, stirring often on med heat, about 8 minutes. Remove from heat and let cool for 5 minutes.
  • Place pork tenderloin in a baking dish or bag and pierce all over with a fork. Pour marinade over the tenderloin, place in fridge to marinade for 6 hours or overnight.
  • When ready to cook, remove pork from fridge. Pre-heat oven to 425 degrees F. Heat 1 tablespoon of butter in a cast iron pan over medium heat. Once hot, add tenderloin.
  • Cook for 2-3 minutes to get a nice sear on the pork. Flip and cook on the other side for another 2-3 minutes. Spoon some of the melted butter over the tenderloin as it cooks.
  • Remove from heat. Add green beans or broccolini (if desired). Place whole pan into the oven. Roast for approximately 15 - 18 minutes or until internal temperature is 145 degrees F.
  • Let rest for 5 - 10 minutes before cutting into the tenderloin. Serve with the veggies and rice.

Notes

Discard any unused or leftover marinade.
This marinade works on chicken and beef too.
When using this marinade, you CAN go too long. Keep it to 30 minutes to no more than 24 hours.
Let pork rest after you're finishing cooking to allow the juices to stay within the meat and for it to finish cooking.
