Roasted Broccoli with Parmesan Cheese

Oven roasted broccoli has never been easier or more delicious! This roasted broccoli recipe uses fresh broccoli, garlic, salt, lemon and parmesan cheese. Yum!

Ingredients

  • 1 ½ pounds broccoli about 6-7 cups
  • 3 tablespoon olive oil
  • 3 garlic cloves minced
  • ½ teaspoon Kosher salt
  • Freshly ground black pepper
  • 1 lemon for juice
  • ¼ cup grated Parmesan cheese

Instructions

  • Preheat oven to 425 degrees F. Line a baking pan with parchment paper.
  • Cut the broccoli florets into bite size pieces. Cut the stalk into ⅛-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, Kosher salt and pepper.
  • Place in the oven and roast just until the broccoli is tender, about 15 minutes, stirring halfway. Remove from the oven, toss in the cheese and lemon juice. Enjoy warm.

Notes

Leftovers good for up to 3 days in the fridge. Just re-heat and serve.
