Chopped Chickpea Salad with Oranges and Mint
This chickpea broccoli chopped salad is fresh, crunchy, and made for meal prep. Sweet oranges + hearty chickpeas + crisp broccoli = a gluten-free salad that actually holds up in the fridge (no sad, soggy leftovers here).

heads broccoli
chopped into small florets, about 3 cups

green apples
diced small

dried cranberries, unsweetened

roasted pistachios
salted, shelled and roughly chopped

chopped fresh mint
Dressing

Instructions
Add all of the prepped salad ingredients to a large bowl.
Whisk together the dressing ingredients in a small jar or bowl.
Pour the dressing over the salad ingredients. Toss gently to coat everything.
Serve right away or divide into meal prep containers and place in fridge.
Notes
Yield: About 12 cups.
Leftovers are good for about 4 days in the fridge.
