Chopped Chickpea Salad with Oranges and Mint
Ingredients
- 1 can chickpeas 240ml, drained and rinsed
- 2 large oranges peeled and diced
- 2 large heads broccoli chopped into small florets, about 3 cups
- 2 green apples diced small
- ¾ cup dried cranberries, unsweetened
- ⅓ cup roasted pistachios salted, shelled and roughly chopped
- ½ cup chopped fresh mint
Dressing
- 2 tablespoon Olive oil
- 1 Lemon for juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Kosher salt
- ¼ teaspoon fresh ground pepper
- Extra finely chopped mint
Instructions
- Add all of the prepped salad ingredients to a large bowl.
- Whisk together the dressing ingredients in a small jar or bowl.
- Pour the dressing over the salad ingredients. Toss gently to coat everything.
- Serve right away or divide into meal prep containers and place in fridge.
