And when it's summer, we need simple.
I mean, nothing says EASY like slapping on some spicy cajun seasoning on a filet of salmon and baking it in the oven till done.
Not only that: the corn salsa that goes with it comes together in 15 minutes flat.
And you make it while the salmon bakes in the oven💃
Ingredients
- Corn on the cob
- Cherry tomatoes
- Cilantro
- Salmon filets
- Cajun seasoning
- Olive oil
- Salt and pepper

Pro Tip
Do NOT overcook your salmon. And trust me: it's easy to do.
If I see that white stuff comin' out of the filet when it's in the oven, I know I've over done it☠️
The fix? Check your salmon filets after 12 minutes of baking in the oven. If they flake easily with a fork, pull 'em out!

Ingredients
- 2 corn cobs cooked
- 2 cups cherry tomatoes, quartered
- ⅓ cup cilantro chopped
- lemon
- Kosher salt and fresh ground pepper
- Olive oil
- 4 salmon filets 6 oz / 170g each
- 2 tablespoon cajun seasoning
Instructions
- Preheat the oven to 425°F (220°C).
- Rub Cajun seasoning mixed with 2 tablespoon olive oil onto the salmon filets.
- Bake the salmon on a tray for 12-15 minutes until done.
- While the salmon bakes, cut corn kernels off the cobs and place them in a bowl. Add cherry tomatoes, cilantro, juice from the lemon and 2 pinches of Kosher salt and some fresh ground pepper. Toss the salad together.
- Serve the corn salsa with salmon filets on top.
