This juicy shredded chicken made with fresh salsa will be your new fave go-to recipe for tacos, power bowls and easy meal prep💃

K, I feel there are a lot of recipes out there for slow cooker chicken salsa. But THIS one is different.
In a couple very good ways. For one, you use frozen chicken breasts. Hello, easy dinner figured out at breakfast time😄
And two: this slow cooker chicken salsa uses fresh salsa.
Can you use regular jarred salsa? Technically, yes.
But why would you wanna!?
Use the fresh salsa and you will NOT be disappointed. Promise.

Ingredients
- Frozen chicken breasts
- Fresh salsa (ie, the kind you buy in the fresh and refrigerated section of the grocery store; not the salsa in a jar)
- Chicken broth
Instructions

Add the frozen chicken breasts to the slow cooker and add the chicken broth.

Top with fresh salsa.

Cook on high for 7 hours or until the chicken breasts shred easily with a fork.

Shred all the chicken breasts in the crock pot and stir.

Top Tip
If your chicken broth is salt-free, I recommend adding some Kosher salt on the chicken breasts before slow cooking them.
AND some once the chicken is all cooked and shredded.
If your chicken broth already contains salt, then you're good! Probably no need to add more.
Just make sure you chicken broth is gluten-free. Gluten can sneak into broth and if you're very sensitive to trace gluten, you'll want to avoid that🙅♀️

🥡Make it a Meal Prep
My fave thing to make with this chicken are "power bowls"!
Add the shredded chicken to the bottom of meal prep container. Top with: black beans, diced tomatoes, feta cheese, corn niblets and cilantro.
Place in the fridge for lunches till mid-week!

- Crockpot
Ingredients
- 3 chicken breasts, frozen about 1.5 lbs / 0.7 kg
- ⅓ cup fresh salsa (the refrigerated kind)
- ¾ cup chicken broth
- Kosher salt to taste
Instructions
- Place frozen chicken breasts in the slow cooker.
- Top with salsa and chicken broth. Cook on low for 7 hours or high for 4 hours.
- Shred chicken with forks and season with Kosher salt if needed.
