Yummy Mango Salsa

This delicious Mango Salsa is easy to make and packed with flavour from the sweet mango, flavourful red onion, fresh bell pepper and lime.

Ingredients

  • 2 cups frozen and thawed mango diced
  • 1 jalapeno pepper deseeded and chopped
  • 1 large red pepper, diced 1 cup finely diced
  • cup cilantro and tender stems chopped
  • ¼ red onion, diced ½ cup finely diced
  • 1 lime
  • ¼ teaspoon salt

Instructions

  • Combine all ingredients in a large bowl, except for the lime juice and salt.
  • Roll the lime on the cutting board with your hand a few times to get the juice out. Slice in half, squeeze the lime juice over top of the salsa and add the salt last. Stir to combine fully
  • Let set in fridge for at least 30 minutes before serving.

Yield: makes about 5 cups of salsa.
Good for about 1-2 days in the fridge.
