    Simple Romaine Salad with Radish and Parmesan

    The sun is shining, the flowers are a bloomin' and dare I say, summer is in the air.

    And when it comes to warmer weather, fresh, healthy and easy salads are just what we need to keep eating healthy and spend as little time as possible in the kitchen.

    Enter: this Simple Romaine Salad with Radish and Parmesan????

    And the dressing for this Simple Romaine Salad with Radish and Parmesan is your next favourite: just olive oil, lemon juice with some salt and pepper.

    You could also call it: The Best Simple Salad in the World????️ I know it's a big promise but you guys. It's just that good.

    And simple. You know I've got you on simple and it doesn't get any easier than this.

    Salads made with romaine lettuce are one of my favourites because they're hardy enough to not get soggy in a little dressing (I'M LOOKING AT YOU, MIXED GREENS) so this salad will stay crisp for at least a couple hours and won't wilt to mush at a get-together.

    Man, is there anything worse that soggy mixed greens, drenched in overly-complicated dressing? blech.

    If I'm lucky enough to get an order from Elberta Farms then the romaine lettuce is out of this world. In taste and size.

    Not to mention nutritionally-speaking. Want the full vitamins, minerals and antioxidant capacity from your veggies? Get 'em as close to home as you can.

    Only olive oil, lemon juice with some salt and pepper. That's it!

    These days, I'm going through lemons and limes like a mad-woman. And why the heck not? They seems to make everything better????

    Side note: a neighbour has a lemon tree in her house. And here's the best part: it's a lime AND lemon tree! Cool, hey? And eventually, the fruit shall bear fruit.

    I just think picking limes and lemons from your very own tree sounds so freakin' lovely I can't hardly stand it.

    Do you have a garden? I mean in theory, it sounds amazing. All the fresh produce you can handle, right from your own backyard?

    Teaching your kids about agriculture, and where food actually comes from, and how to take care of things and watching them grow. All so cool.

    But a friend recently reminded me that they are a lot of work too, of course.

    So I think for now, I'll stick with my herb garden (cilantro!) and maybe a cherry tomato plant in a container or two????

    Simple Romaine Salad with Radish and Parmesan

    This Simple Romaine Salad with Radish and Parmesan is a perfect way to get your veggies in at supper and it keeps things simple and healthy!

    Ingredients

    • 10 cups Romaine lettuce, roughy chopped and washed about 3 medium heads of romaine lettuce or 2 large
    • 1 cup radishes, thinly sliced
    • 1 medium red onion, thinly sliced
    • ⅓ cup Parmesan cheese, grated

    Dressing

    • ¼ cup olive oil
    • 1 large lemon, juiced
    • Salt and pepper to taste

    Instructions

    • Combine prepped romaine lettuce, radishes, red onion and parmesan in a large bowl.
    • Whisk dressing ingredients together. Pour over salad and toss to combine. Serve.

    Notes

    If you need to make ahead of time, feel free to pour the dressing on (if you can't keep it separate) and keep the dressed salad in the fridge in a Tupperware container. If the romaine is really fresh, it'll stay pretty crisp for ~2 hours.
