Strawberries and cucumbers are a match made in heaven, don’t you think?
Something about the sweet strawberries and the hydrating cucumbers that balance each other so well.
And then you throw MINT into the mix with some fresh lime juice?! C’mon. We are in business people.
This salad with strawberries, cucumber and mint really brings out the best in all the ingredients in this easy dish.
And when it comes to summer, isn’t it all about keeping things simple?
You don’t wanna hang out in the kitchen for hours while you miss catching up with your friends. It’s been WAY too long since you’ve seen them – there’s lots to chat about😄
I’m really looking forward to a season of catching up with friends and enjoying delicious eats, poolside (we finally got the pool up and running!)
Here’s what you’ll need to make this Strawberry Cucumber Salad with Mint:
- Sliced strawberries🍓
- Chunks of cucumbers🥒
- Lime juice
- Fresh torn mint🍃
Can I make this ahead of time?
Yes! You can make this up to 2 hours before serving. Just toss everything together and keep covered in the fridge. You can squeeze some additional fresh lime juice over top just before you’re ready to serve and stir it all up one more time.
How long will this strawberry salad keep in the fridge?
If you want to make this ahead of time (see above) and any leftovers will still be good for at least 1/2 a day. Any salad left the next day won’t be as good as the strawberries will start to get soft and the mint soggy (boo.)
Can I use lemon instead of lime?
You totally can use lemon instead of lime. It gives it a different flavour but it’s citrus! It’ll work just fine.
Hope you love this Strawberry Cucumber Salad with Mint like we do😄
