Is sweet potato good for breakfast?
Sweet potato is absolutely great for breakfast! This gluten-free vegetable is a perfect way to kick-start your day. You can steam them in the Instant Pot the night before (check out this recipe) and then just re-heat the sweet potato in the morning and top with some Greek yogurt, a sprinkle of any chopped nuts for a crunch and a drizzle of honey. Or try leftover roasted sweet potato in a gluten-free wrap with some sliced peppers, a handful of spinach, scrambled eggs and a shot of hot sauce or sriracha.
Are sweet potatoes healthy?
Yes, sweet potatoes are healthy. Sweet potatoes are a source of healthy carbs, vitamin A, vitamin C, antioxidants, filling fibre and they're naturally gluten-free.
Any food can be taken down a notch or 2 on the healthy scale, depending on what it's paired with, so if you're looking to keep it on the healthy side, roast, bake or pan fry chunks of sweet potato in a little olive oil to bring out their natural sweetness.

📖 Recipe
Sweet Potato and Apple Hash with Superfood Brekkie Links
Ingredients
- 1 tablespoon Olive oil
- 1 Shallot, diced
- 3 stalks Celery, diced
- 3 cups Sweet potatoes, diced about 2 large
- 4 Superfood Brekkie Links
- 4 Apples (like Gala), sliced
- 1 tablespoon Brown sugar
- ¼ Apple juice
- ¼ cup Walnuts
- Salt
Instructions
- Pre-heat oven to 350 degrees F.
- Heat 1 tablespoon of olive oil in a large non-stick fry pan. Once heated, place diced shallot and celery in oil. Stir for a couple minutes until the celery becomes translucent and the shallot softens.
- Toast the walnuts in a small non-stick pan until browned and they start to give off a smell.
- Add the 3 cups of diced sweet potatoes to the pan and cook, stirring every few minutes for about 10-13 minutes or until the sweet potatoes start to soften.
- Then add the sliced brekkie links and cook for another five minutes to heat the links through. Add the mixture to a large baking dish.
- While sweet potatoes cook, in a separate non-stick fry pan over low-medium heat, cook the sliced apples for a couple minutes and then sprinkle them with 1 tablespoon of brown sugar. Turn over in the pan to coat. Add ¼ cup of apple juice and cook about 5 minutes. Sprinkle with a little salt and remove from heat.
- Top the sweet potatoes with the cooked apple slices, sprinkle with the walnuts and drizzle the 1.5 tablespoon of maple syrup over top.
- Bake in a pre-heated oven for 20 minutes. Serve.
