These Gluten-Free Healthy Peanut Butter Oatmeal Raspberry Breakfast Bites are a perfect way to start your day☀️
It's really is one of those "recipes" (and I'm using that term lightly, k?) that you can throw into one bowl, mix'er up and chuck (carefully) into the oven.
Packed with healthy carbs, a hit of protein, fibre and you can grab em' and go? You're sooooo in, right?
Breakfast has taken on some new meaning these days. Basically, if you can get something down the food pipe before you go out the door (or if you're like me, downstairs) in the morning, you are winning my friend.
Since a recent gastrectomy and stomach lining biopsy revealed that my stomach lining is "inflamed", the gluten was the first to go.
Ok, but like, go for real.
Have you ever cut something out, or knew your body wasn't so thrilled about something (hello dairy?) but you eat it anyways?
(Insert you nodding here because you get it.)
Well that was me with cutting out gluten.
I knew how to cut it out but then "oh, is it Friday already? Oh yeah, sure I can have some pizza".
All it took is one #FridayNightPizzaNight and I'm back on the wheat train in no time????
The problem? A couple slices would have me laid up in bed on Saturday afternoon. The. Worst.????♀️
So, in search for a gut that doesn't not swell up like I'm gonna have another baby boy in 3 months, gluten has been banned.

Here's what you'll need to make these Healthy Peanut Butter Oatmeal Raspberry Breakfast Bites:
- Rolled oats (gluten free)
- 1 large banana - get that soft one from your countertop
- Natural peanut butter
- Frozen raspberries
- Cinnamon
- Salt

Healthy Peanut Butter Oatmeal Raspberry Breakfast Bites (gluten-free)
Ingredients
- 1 cup rolled oats, gluten-free not instant oats
- 1 large banana, smushed
- 1 tablespoon natural peanut butter
- ⅓ cup frozen raspberries
- 1 teaspoon cinnamon
- 1 pinch salt
Instructions
- Pre-heat oven to 350 degrees F. Cover a baking sheet in parchment paper.
- Add all the ingredients to a medium bowl.
- Mix well until the oats are coated and you have a "dough".
- Drop 1 tablespoon spoonfuls onto the prepared baking sheet.
- Bake in pre-heated oven for 15-17 minutes. Eat right away or cool and store in container.

Thanks for your message. I'm thinking of a few options that you could experiment with:
Quinoa flakes (basically quinoa but "flattened" into a flake); acts a lot like oats in baked goods. Here is a package if you're curious: https://www.amazon.com/Quinoa-Flakes-Organic-Superfood-Certified/dp/B07SV5D4YX
Or I was also thinking of coconut flakes (not the shredded stuff; also sold as "coconut chips") but that would make it very different from a texture perspective. Maybe 1/2 and 1/2 would be a place to start?
Last one: ground flax, rice bran or chia seeds can also generally be subbed for oats but since this recipe has no flour, again it would be an experiment. Again, maybe reduce the oats by 3/4 and use a combo of the suggestions to start.
